Red IPA 6.5% abv. In collaboration with Sea Grant at the University of Hawai'i, this beer memorializes Peter Rappa, who was a foundational force in building the Sea Grant program and an early adopter of craft beer in the USA.

Tripel 8.8% abv. Inspired by the great Trappist tradition of brewing in Belgium and France, this high-ABV beer is deceptively smooth and easy to drink. Expect notes of clove and banana from the Belgian yeast strain, a strong malt backbone, and a crisp, resolving bitterness.

Barrel Aged Sour 6% abv. We brewed a wheat beer and aged it 2 years in our oak barrels inoculated with a blend of nine microbes. The bright, spicy citrus aroma jumps out at you. This is a sipper. Let the flavors evolve on your pallet.

Lager 4.8% abv. There's a long history of beer in the Pacific Island Cultures, including Hawai'i. Introduced by the European sailors who tried their hand at navigating these waters a thousand years after the islanders did it in canoes, beer was, for the sailors, their form of potable water... the alcohol content of the beer resists spoilage and could keep for the long voyages. This light, crushable lager will help keep your good time from spoiling, no matter how far your adventure takes you.

Kölsch, 5.4% ABV. The easy thing to say is that a Kölsch is a cross between an ale and a lager... More robust than a lager, crisper than an ale. The truth, as always, is more interesting. In 17th century Germany, brewers in the city of Köln resisted the growing popularity of lager yeasts. To compete with the crisper flavor profile of lagers, they trained their house ale yeasts to ferment at lager temperatures. Today, we enjoy them as Kölsch yeasts, technically an ale, but akin to lagers in flavor. We think it's a perfect taste for another day in paradise.

West Coast IPA 6.5%. We modeled our west-coast IPA on the legendary pioneers of the style brewed in California in the 90's. We use a solid malt background and a higher abv to balance the bitterness of our American grown hops. When the beer is done fermenting, we hit the batch with another generous dose of hops. This dry-hopping stage allows the alcohol developed during fermentation to bring the volatile aromatic compounds into the beer, creating a magnificent aroma.

This one’s for those who get after it. You know who you are… the ones who won’t let your dreams slip out of your sights because you know you might not find your way back to them; the ones who know that what we did yesterday doesn’t mean as much as what we do today; those who grab something sweet when your palate’s gone bitter, and the ones who move fast enough to keep the golden glowing sunset on the horizon. We loaded this beer with Citra, Mosaic and Centennial hops during fermentation for a tropical citrus flavor with hints of mango and papaya. It tastes like the perfect Hawaiian sunset we all chase after. Drink one. Then get after it! Contains Lactose.

On the nose it presents a rich range of olfactory sensations going from banana to pineapple, from vegetal to vanilla scents. The taste is assertive, rich, soft and full with an excellent long lingering finish.

Aromas of white peaches with citrus notes of lemon blossom and lime zest. On the palate, the wine opens with flavors of Meyer lemon and mandarin orange followed by crisp, refreshing acidity on the mid-palate and a long, clean balanced finish

White flowers of acacia, jasmine, bouquet of citrus such as pineapple, grapefruit and orange, apple, pear and mango and a light note of bananas. Fresh and pleasant thanks to its sustained acidity.

Rich floral and fruit aromas come off the nose of this wine, with black cherry, violets and rose petals plus stony notes of pavement and crushed rock. The palate brings an edge. A savory blend of spices, soil and a hint of balsamic vinegar push against more berries. Tannins are substantial and chewy, and acid kicks back.

Aromas of red cherry, raspberry, and a hint of baking spices, this Pinot Noir intrigues the senses. The palate delivers flavors of cranberry, clove, and a smooth texture, leading to a wine of finesse and charm.

Aromas of raspberries, blackberries, plum, and mocha with notes of cinnamon and cedar. The wine opens with red fruit flavors, followed by velvety tannins on the mid-palate and notes of black pepper on the long, textured finish.

Floral aroma of red roses and pansies, fruity aroma of cherries, sour cherries, plums, greengages, woodland berries such as blackberries, redcurrants and blackcurrants, raspberries. Well balanced, tangy and fresh. Intense and with a good body despite its young lightness.

The wine was fermented in open top tanks and received daily punch-downs. This enabled optimal extraction and structure development, while maintaining elegant tannins. After fermentation, the wine was transferred to French oak barrels. The 20% new oak gives the wine subtle spice and vanilla characters, without overpowering the elegant fruit profile.
